Stock rotation in food is the process of organising all your food items so the older ones are used up before newer ones, minimising waste and spoiled food. You wouldn’t open a new pack of cheese at home before using up the old one first, so it’s just the same in a commercial kitchen. This can sometimes also be known as the First In, First Out (FIFO) method.
Stock rotation is essential for a smooth-running kitchen.
